My favourite time for fundraising is just around the corner!
That's right, October AKA Breast Cancer Awareness Month is a few weeks away, and just like last year, I am collecting donations to go towards my 5k CIBC Run for the Cure. Last year's run was super fun and memorable, as it was my first year completing the run in Winnipeg with the beautiful women of my family, and marked by this blog post.

This year, however, will be special in its own way, as the run will be taking place on my 25th birthday. I have decided to make this year's run really count by raising $500.00 by my birthday/run day, Sunday October 4. Already a stand-out year of fundraising for me, I was approached by a coworker who thanked me for my fundraising efforts, and then told me that she is officially 1 year Cancer-Free, and that she is alive today because of people like my family raising money for cancer research. Wow. If that isn't motivation to do more, I don't know what is.
I have already received such incredible support by family, friends, and coworkers- and I can't thank everyone enough!! Well... maybe I can try. With Cupcakes!!

Pink Cupcakes!!
Ingredients:
- 1 1/4 cups cake flour (or 1 1/8 cups all purpose flour + 1/8 cup corn starch)
- 1 1/4 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup buttermilk (or 1/2 cup milk + 1/2 tbsp white vinegar)
- 2 eggs
- 3/4 cup white sugar
- 1 1/2 tsp vanilla
- 1/2 cup vegetable oil
First, combine your cake flour, baking powder, baking soda and salt. If you are making your own buttermilk, now is the time to combine the milk and vinegar and allow it to sit.
In a separate bowl, with an electric mixer, beat your eggs for 10-20 seconds until they have become pale and frothy. Add in your sugar and mix for an additional 30 seconds. Mix in the vanilla and vegetable oil.
Still using your electric mixer (or muscles, I suppose), mix in half of the flour mixture, followed by half of the buttermilk. Repeat.

As you can see, this produces a perfectly simple vanilla cupcake. But I want these cupcakes to be special. So I added in just a wee bit of pink food gel colouring.
Much better.
Now fill your greased or lined cupcake pans half way and pop in the oven at 350 F for about 14 minutes. If making mini cupcakes, 10 minutes is definitely enough time. But to be sure, always test with a toothpick -- if the toothpick inserted to the center of the cupcake comes out clean, your cupcakes are ready!
Because I am not the biggest fan of sweet frosting, I topped these delicate cupcakes with (premade- eek!!!) cream cheese frosting, and some homemade decals.
Et voila!
